The gazelle crunches Finland – Logbook

Good some little news from the far north

We had a Finnish cooking class about ten days ago and we will have two new sessions next week.
Their cuisine is interesting, smoked, pickled fish, pickled vegetables, lots of berries and an incredible amount of breads including a potato variety.

The cakes have a lot of crème fraiche or custard and the aromas are mainly strawberry, vanilla and chocolate. and red jam. Basics as we like them anyway.

Our first mission in Helsinki is to feed 350 people on campus, with 7 hours of preparation, 3 hours the day before and 4 hours the morning of the event.

Finns have lunch and dinner very early

Lunch is served from 10:30 am, so we walk in the morning between the smell of lasagna and coffee. They drink “American” coffee all day. They seem to be the biggest consumers of coffee in Europe and I believe in the world. They also drink a lot of milk. It is free in the school canteen, like water. If I understood the biology course they have not lost the enzyme which allows them to digest milk. “As the course was in English, I may be confused”.

To come back to our work, this Wednesday, there will be 6 of us in the kitchen, not the best organized, not the fastest, I am curious to see what will emerge from this experience!
